Vegan Herb Bread with Oregano & Cumin

This is a simple vegan herb bread with no added oil. This is my favorite bread recipe; simple enough that it should just work but with a great taste.

Ground Ingredients
 ½ cup flaxseed (optional)
 ½ cup oregano (optional)
 ¼ cup cumin (optional)
Other Dry Ingredients
 6 cups brown flour
 ¼ cup black sesame (optional)
 3 tbsp instant yeast
 1 tbsp table salt

Preparation

Blend the flaxseed, oregano and cumin, and set to one side

Place the flour in a large mixing bowl, and add yeast

Mix the yeast with the flour, then add all other dry ingredients (blended ingredients and salt)

Mix thoroughly, then mix some more.

Make a well in the center then start slowly adding water

Work the dough until the moisture is distributed and has enough moisture to be a little sticky

Separate the dough into 2 equal portions

Transfer one portion of the dough to a work surface lightly dusted with flour

Add a little more flour if dough is too sticky to knead, but otherwise you want it as moist as possible

Knead for 10 minutes, then repeat with the 2nd dough portion

Proofing

Place the dough portions on two plates and set aside for 2 hours

Knock back and shape the dough, and transfer to baking tray(s)

Set aside for 1 hour

Preheat your oven to 200 Celsius / 390 Fahrenheit.

Bake Bread for 30-35 minutes (Exact baking time depends heavily on your oven and the size/shape of the loaves)

Remove bread from oven and cool on a wire rack

Vegan Bread with Oregano & Cumin

The time needed to proof the dough is variable, and the times I have suggested are conservative. Feel free to cut the time a little short if your family or other matters need your attention. Also, there is no harm in adding an extra hour or two if you need to go out unexpectedly. The whole process can be slowed by putting the dough in your fridge if needed.

Notes About the Bread Ingredients

I have marked all ingredients other than flour,yeast, and salt as optional in the recipe. Please keep in mind that as you change the recipe, this will affect both cooking times and ideal temperature. If you make a more plain bread you should use a higher temperature.

To keep costs down, I like to shop at a baking supplier. Depending on where you live you may do better at a supermarket. You should store your yeast in the freezer where it will be good for months (at least).

Baking bread fills the house with a fantastic aroma. If you use oregano and cumin, you will step this up to a whole new level. You will attract hungry people to the kitchen.
